Sugar Mommas’ Chocolate Krispy Cookies

Sometimes you just have to let your imagination take you away. In the cereal aisle I stood mesmerized by all of the options; the good old-fashioned cereals we grew up with and all the new adaptations that have come along. Lucky Charms, Fruit Loops and Cocoa Krispies were a few favorites. Of course, now I feed my children healthy cereal but I longed to grab the Fun Pak. I decided to toss some cereal into cookie dough and see how they turned out. These cookies turned out to be pure chocolate delight and will become a favorite of any confirmed chocolate lovers. It’s packed with cocoa followed by a chocolate crunch. The children were delighted to whisk the cookies off to school to share with their class. As they left I heard the comment, “These cookies will make you legendary!” What more could a mom ask for?
You will need:
2 cups plus 2 tablespoons flour
¾ cups unsweetened cocoa powder (we used Trader Joe’s brand)
1 teaspoon baking soda
½ teaspoon salt
2 ½ sticks unsalted butter, room temperature
2 cups granulated sugar
2 large eggs
1 ½ teaspoons vanilla extract
2 cups Kellogg’s Cocoa Krispies cereal
Baking Instructions:
In a bowl whisk together the flour, cocoa powder, baking soda, and salt and set aside. In the bowl of a stand mixer fitted with the paddle attachment, place the butter and salt and mix on medium speed until light and fluffy. Reduce the speed to low and add the eggs, one at a time, and then the vanilla. Slowly add half the flour mixture and mix. Add in the second half of the flour mixture and blend until just combined.
Place a large piece of parchment or wax paper on a work surface. Roll the dough into a ball and place in a re-sealable plastic bag. Chill for 1-2 hours until firm.
Preheat oven to 350°. Spray baking sheets with non-stick spray or use parchment paper and set aside. Place the Cocoa Krispies cereal in a bowl and set aside. Use a small cookie scoop or a spoon to make a 1” ball shape. Roll the ball in the cereal on three sides. Place the each ball on the baking sheet, dough side down, leaving 2” of space. These cookies will spread. Bake for 10 minutes or until set. Remove from the oven and cool for 10 minutes on a wire rack. Enjoy! This recipe makes approximately 3 dozen cookies.
Sass it up: If you are a Kamikaze chocolate lover we dare you to grind up 2 cups of Cocoa Puffs cereal until it is like sand. Then roll each cookie in the cocoa puffs before you roll them in the Cocoa Krispies. Whamo! Kaboom! Chocolate explosion. (This was an 8 year old’s idea-obviously).
Modern variation: Roll your cookies in colored sprinkles or sugar crystals.
